Ingredients
Method
Preparing the Skillet
- Start by heating the olive oil in a large skillet over medium heat until it shimmers.
Sautéing Sweet Potatoes
- Add the diced sweet potatoes to the skillet with a sprinkle of salt and pepper. Sauté for about 8 minutes, tossing occasionally until they start to soften.
Steaming for Texture
- Add 3-4 tablespoons of water to the skillet, cover it with a lid, and let steam for about 4 minutes, until the sweet potatoes are fork-tender.
Mixing in Flavor
- Once tender, add the diced green chiles, black beans, brown rice, chili powder, cumin, oregano, paprika, garlic powder, salsa, cilantro, lime juice, and additional salt and pepper. Stir well.
Adding the Cheese
- Sprinkle the shredded cheese over the skillet mixture, cover, and let cook for another 3-4 minutes until the cheese is melted.
Serving
- Remove from heat and serve topped with additional cilantro, avocado slices, and a dollop of Greek yogurt or sour cream if desired.
Notes
For added heat, adjust the number of green chiles or add hot sauce. Use fresh herbs for enhanced flavor. This recipe is great for meal prep and can also be plant-based without cheese.
