Method
Preparation
- Melt the white chocolate in the microwave or using a double boiler until smooth, about 1-2 minutes. Set aside to cool for 5-10 minutes.
- In a large bowl, combine pumpkin puree, powdered sugar, and pumpkin pie spice. Mix until well blended.
- Pour the cooled melted chocolate into the pumpkin mixture and stir until combined.
- Gradually fold in the graham cracker crumbs until a thick dough forms.
- Cover the bowl with plastic wrap and chill in the fridge for 1-2 hours until firm enough to scoop.
- Mix granulated sugar and ground cinnamon in a shallow bowl for the coating.
Assembly
- Scoop about 1 tablespoon of the dough and roll it into a ball. Roll the ball in the cinnamon-sugar mixture until fully coated.
- Optionally, create indents on the sides with a toothpick and press a mini chocolate chip into the top for decoration.
- Store the truffles in the fridge until ready to serve.
Notes
For a softer texture, let the truffles sit at room temperature for 10 minutes before serving. These truffles can also be customized with different spices.
