Ingredients

For the Truffles
  • 4 ounces good quality white chocolate Use high-quality white chocolate for best flavor.
  • 1/3 cup pumpkin puree NOT pumpkin pie filling.
  • 1 tablespoon powdered sugar
  • 1/2 teaspoon pumpkin pie spice or ground cinnamon Can swap with ground cinnamon or favorite spices.
  • 1 1/2 cups graham cracker crumbs
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon ground cinnamon
  • to taste mini chocolate chips Optional for decorating.

Method

Preparation
  1. Melt the white chocolate in the microwave or using a double boiler until smooth, about 1-2 minutes. Set aside to cool for 5-10 minutes.
  2. In a large bowl, combine pumpkin puree, powdered sugar, and pumpkin pie spice. Mix until well blended.
  3. Pour the cooled melted chocolate into the pumpkin mixture and stir until combined.
  4. Gradually fold in the graham cracker crumbs until a thick dough forms.
  5. Cover the bowl with plastic wrap and chill in the fridge for 1-2 hours until firm enough to scoop.
  6. Mix granulated sugar and ground cinnamon in a shallow bowl for the coating.
Assembly
  1. Scoop about 1 tablespoon of the dough and roll it into a ball. Roll the ball in the cinnamon-sugar mixture until fully coated.
  2. Optionally, create indents on the sides with a toothpick and press a mini chocolate chip into the top for decoration.
  3. Store the truffles in the fridge until ready to serve.

Notes

For a softer texture, let the truffles sit at room temperature for 10 minutes before serving. These truffles can also be customized with different spices.
