Method

Preparation
  1. Heat one tablespoon of olive oil in a medium skillet over medium-high heat.
  2. Season the chicken breasts with sea salt on both sides.
Cooking the Chicken
  1. Place the chicken breasts in the hot skillet and cook for about 4-5 minutes on one side until golden brown.
  2. Flip the chicken breasts and cook for an additional 4-5 minutes or until fully cooked through.
Making the Sauce
  1. In a small bowl, whisk together the strawberry jam, balsamic vinegar, and water, adjusting the water if needed.
  2. Pour the sauce over the chicken when it is almost finished cooking.
Final Steps
  1. Reduce the heat and let the sauce simmer for 2-3 more minutes, stirring in most of the fresh basil.
  2. Carefully remove the chicken from the skillet, drizzle with the sauce, and sprinkle with goat cheese and remaining basil.
  3. Garnish with sliced strawberries and serve.

Notes

Consider marinating the chicken in the strawberry jam and balsamic vinegar for extra flavor. Use high-quality ingredients for the best taste. You can add nuts for texture or substitute goat cheese with feta.
